1.4kg ish topside. Roll all sides in olive oil (Never mind measures, just dollop), rosemary, thyme, garlic, mustard powder, salt and pepper.

Aunt Betty's Frozen Yorkshire Puddings, pack of 12, I used 4.
Birds Eye Frozen Garden Peas. Big dollop in a bowl. Lump of butter.
Maggie Beer Australian red wine finishing sauce x 2.
A South Australia cab shiraz.
A Marlborough Pinot Noir.
Eton Mess for dessert (thankyou Leisa 😘 )

Take the beef out of the fridge half an hour or so before you want to start cooking it. Rinse bloody stuff off, dry in tea towel. Recipes say pat dry with kitchen paper towel. Nonsense, unless you want bits of kitchen roll stuck to yr beef.

Pre heat air fryer @ 200C for 10 mins. Philips (we have a most satisfactory Philips XXL) say pre-heating unnecessary, more nonsense.
Put beef into air fryer @ 200C for 15 mins. Oh, did I mention that you should roll it in olive oil, salt & pepper & stuff before you do that? This, together with pre-heating, gives a lovely char like that which you wld get from traditional pre-oven-roast searing.
After 15 mins has elapsed, extract beef from air fryer, turn it over, and stick a Meater(™) into it. Reduce air fryer temp to 180C, set time to 40 mins. Put beef back in, of course. Tell Meater(™) that you're aiming for an internal temp of 55C (just rare side of medium rare. YMMV)
When you attain yr chosen internal temp (for beef, that is, not yours), remove beef, put it onto a chopping board & cover it with foil. It will rest thereon until the General Resurrection. Or 20 mins, whichever is sooner.
Add frozen roast veg, spray lightly (hah!) with avocado oil, up temp to 200C. Set 15 mins. Shake every 5 mins (the veg, I mean, not the cook).
Pour Maggie Beer sauce into saucepan, heat over a low heat.
At 15 mins, add frozen Yorkshires to air fryer. 3/4 mins (that's 3 or 4 mins, not 45 secs).
At same time, put frozen peas and accompanying lump of butter into microwave, set high for 3 mins.
Get yr wife to slice the beef, unless you like hacked chunks.
Place Yorkshires elegantly onto Willow plates, where yr wife has meanwhile artistically placed a few slices of beef.
Decant roast veg into a serving bowl, ditto peas, ditto Maggie Beer sauce (by this time well heated) into a blue Willow gravy boat.
Ensure that horseradish sauce and hot English (is there any other sort?) mustard are on table.
And the cab shiraz and Pinot Noir? Use yr imagination.
